If you have your heart set on one of the more expensive laminates but it just doesn't fit into your budget, consider installing it yourself. This can knock off $20 - $30 per square foot. It isn't as difficult as it looks to install laminate countertops and if you have a basic knowledge of tools, you can find many resources online showing you exactly how to do it. You can also go to your local hardware store and probably take a class before installing as well, if you feel more comfortable that way.
If you still feel that laminate countertop prices are too much for your budget, you may also be able to paint your laminate if you are ready for a change in your kitchen, but just don't have the funds at the moment to go through a big home improvement project.
